Chef Rachael Zavala received her Culinary education at Diablo Valley College and interned at Perbacco Italian Restaurant in San Francisco, with a focus on Italian cured meats and sausages. She worked at Wente Winery Catering Department, one of the premier wedding and event specialists in Northern California.
Who we are
At The Compass Star we house cure every one of our meats in house. We also make our own seasonal pickles and preserves with the freshest ingredients.
In October 2010 we began the process of opening a cafe in lovely Downtown Martinez. The historic Downtown area is the perfect place for practicing the ancient art of Charcuterie and we look forward to our opening in Summer of 2011.
Rachael will be joined by Chef Brian Stein, formerly of Vesu. We will be proudly joining other Bay Area chefs who are striving to foster a new American tradition of anchient natural meat preservation techniques.
